500g raw beef tenderloin
30g parmesan
A few arugula leaves

Place the meat in a cool place and leave for 1 hour to firm up and make it easier to carve.

Remove the meat from the fridge and cut into thin slices using a long, sharp knife.

Arrange on each plate.

Drizzle with olive oil.

Next, dice a few HUGO gherkins and add them to the carpaccio.

Cut the Parmesan into shavings.

Finally, add a few Parmesan shavings, the arugula leaves and a pinch of salt and pepper.
